Ingredients:
- 4 slices of bread (whole grain, sourdough, or your choice)

- 1/2 cucumber, thinly sliced
- 1/2 red onion, thinly sliced (optional)
- Handful of fresh spinach or lettuce leaves

Instructions:
Preheat a grill pan or skillet over medium heat.
Take two slices of bread and spread a generous layer of hummus on each slice.
Layer the tomato slices, cucumber slices, red onion (if using), and fresh spinach or lettuce leaves on one slice of bread.
Place the other slice of bread with hummus on top to form a sandwich.
